If you use your knives regularly, you know the importance of keeping them sharp and well polished. In comparison to the effortless feeling of slicing rapidly through a red pepper or cutting meat into bits, having a dull blade is intolerable for many. However, the question remains: Should you take your knives to a professional knife sharpener or sharpen them yourself?

When it comes to sharpening your knives, many will tell you that doing it yourself is the best way. While there are a wide assortment of professional knife sharpener companies that provide you with satisfactory work, in a way, having someone else sharpen your knives is a bigger hassle than sharpening them yourself. Not only does it take longer for your knives to be sent back to you, but you also run the risk of possibly sending them to a company that will leave your knives in worse shape than before.

My seven-step process to guarantee a sharp edge and a happy customer.
  1. Inspect
  2. Sharpen with 80 or 120 grit if I need to fix dings or chips
  3. Sharpen with 220 grit to remove the big bur I just made.
  4. Sharpen with 400 & 1000 grit to make sure it’s sharp.
  5. Polish with 6000 grit, leather belt or polishing wheel to hone and polish.
  6. Inspect again
  7. Wrap up and have ready to go back to their owner
This process tends to make more of a convex edge, not quit as sharp but stays sharp longer.
